Served with bacon crisps, cooked egg, orange segments, candied walnuts, sliced mushrooms and red onion
Choice of balsamic vinaigrette or honey mustard dressing

Poached Pear, Arugula and Endive Salad
Arugula with Belgian and curly endive, poached pear, spiced pecans and goat cheese in a port wine dressing

In a Louisiana gumbo sauce with jumbo lump crab and crawfish tailmeat

With caramelized cauliflower and sautéed spinach in a golden raisin-caper emulsion

Crab Stuffed Salmon with Lobster Sauce   
Seared stuffed salmon filet with a sherry lobster cream sauce; served with sautéed spinach and Yukon Gold mashed potatoes

Served with Stag’s Leap demi-glace and sauce Béarnaise
